A unique cooking utensil is required for this recipe and is called "paniyaram patra" or "appam patra". Patra means "pan". Do not soak lentil (urad dal) more than 4 hours during this peak summer season in North India, it may cause a bad smell in the lentil otherwise. If you have to grind the batter after sometime, make sure after 4 hours, you keep soaked lentil in refrigerator and take it out half hour before grinding (i did the same). 2. Do not keep batter for fermentation in this peak summer season in North India for more than 4 hours, refrigerate it and take out 30 minutes before you have to cook Paniyaram. 3. You can always store this batter in refrigerator , but, do not add salt. Also, shelf life is 3 days and take out the batter 30 mins before cooking.
