Delicious Mango Pudding With Basic Ingredients - Easy Mango Dessert Recipe Today I will be showing you how to make mango pudding using basic ingredients that we all usually have at home . This mango dessert recipe is easy to follow and quick to make and above all tastes divine on a hot summer day. 🔔Please click on the link below and subscribe to Curries With Bumbi so that I can bring more new recipes for you-- / @currieswithbumbi Ingredients required for making mango pudding - serves 6 Milk - 3 cups (700ml). It's always a good idea to use full cream milk (whole milk) for this recipe to a richer taste but you can even use skim milk. Eggs - 2 large. Use 3 if your eggs are small Sugar - 1/2 cup (8 tablespoons) Cornstarch (cornflour) - 1/4 th cup (4 tablespoons heaped) Sweet Ripe Mango Pulp - 1/2 Cup or 8 tablespoons only. I used canned mango pulp as fresh mangoes are not easily available at my place. It will always be great if you use fresh sweet mangoes of any variety. In that case peel the mangoes, chop them and blend them to a fine paste in your blender or food processor, but please do not add any water while blending. All you need is 1/2 cup of mango pulp. Cardamom powder(elaichii powder) - 1/4 th teaspoon or you can even use a drop of vanilla essence or a teaspoon of vanilla extract. Salt - just a tiny pinch (forgot to mention in the video). Add it along with the cornstarch, egg mix. Butter (optional) - 1 tablespoon melted. Add butter if using skim milk. Add it after straining your pudding. chopped cubed mangoes for garnish. Method -- in a clean bowl add the eggs, 1/2 cup of milk( taken from the 3 cups of milk), cornflour, and 4 tablespoons of sugar and a pinch of salt. Whisk everything very well. in a pan add the remaining 2 & 1/2 cups of milk. Add the remaining 4 tablespoons of sugar and let the milk come up to a simmer. Do not let the milk boil. *take it off heat. With one hand add the milk a little at a time to the egg mix and with your other hand constantly keep on mixing the egg so that the eggs don't solidify. add this milk and egg mix to a clean pan. Constantly stir it on low heat to prevent anything from sticking to the bottom of the pan. Stir till you get this creamy and sauce like consistency. Take it off heat. Add the mango pulp a little at a time. Pass the pudding through a strainer. Let it cool down and then refrigerate it for 4 hours or more. Please note that this pudding will have a mayonnaise kind of consistency even when chilled ( it won’t set in moulds). Serve it chilled with chopped mangoes. Can even drizzle some fresh cream.
