I'm shook at how good this is! But just an FYI : Finish your mead completely before putting it in a barrel. I put this in the barrel back before I was really stabilizing, and when I did, I did it incorrectly. When I put it in the barrel it was about 1.010, and when I racked it out of the barrel it was under .99 - clearly I had done something wrong. Stabilize and back sweeten, then barrel age, that way you don't have to worry about clarity when you bottle, because it'll be crystal clear. Days later and mine still have a haze, and there is sediment at the bottom of my bottles.
