This traditional way of grilling fish dates back centuries. A number of fishes are taken alive out of water, killed, gutted and transfixed on wooden pegs in a circular around a tamarisk wood fire. They are finally spiced and served with pickles and vegetables. One chef Ya'rib Aziz says that grilled fish is a growing trend here. ''So many people are coming to us nowadays, they like Mazgouf fish. Mazgouf is the best way for fish. It is tasty and delicious.'' Customer Asawer al-Rubai says she and her family like to eat Mazgouf fish. 'We like to eat Mazgouf fish as its taste differs from being grilled at home. We, as Iraqis, like Mazgouf. Grilled on coal. it is delicious and tasty.'' At Dora in south Baghdad, there is a big wholesale market for fish, where fishmongers and customers gather early morning to buy cheap fish.
