Ingredients: Crust: 1-1/2c, 186g of crushed gram crackers 1/4c,50g of granulated sugar 1/3c, 75g of unsalted butter melted Filling: 2c, 480ml of whole milk 1c, 240ml of heavy cream 3/4c, 150g of granulated sugar 5 large egg yokes 2tsp, 8g of vanilla extract 3Tbl, 27g of cornstarch Whipped topping: 1-1/2c, 360ml of heavy cream 1/4c, 30g powdered sugar 1tsp,4g of vanilla extract 1/4tsp, 1g of cream of tarter Directions: Crust: 1) Preheat oven to 350F, 180C then in a small bowl combine gram crackers, butter, and sugar. 2) Then firmly press gram cracker mix into a 9x9inch, 22x22cm pan. Place pan on the center rack and bake 10 minutes, until golden brown. Remove from the oven and let cool on wire rack. Filling: 1) In a medium size heavy bottom saucepan bring the milk and heavy cream to a simmer over medium heat. 2) While milk and creamer are heating up, in a small bowl mix together egg yolk, sugar, cornstarch, and vanilla. 3) Once the milk/creamer mix is starting to simmer pour 1/4c into the egg mix while whisking eggs, then add a second 1/4 cup milk/creamer mix. 4) Pour the tempered egg mix in the saucepan with the rest of the milk mixture, and continuously stir till custard thick and bubbling. 5) Let custard cool for a few minutes once it thickens, then pour into the 9x9 inch square. 6) place plastic wrap directly onto the custard, and refrigerate for at least two hours before adding whipped topping and serving. Whipped topping: 1) Using a stand mixer and a whisk attachment, or a hand mixer and a large bowl combine the powdered sugar, cream of tartar, heavy cream, mix on high speed till soft peaks are formed, then add vanilla extract, then continue to mix on high till stiff peaks are achieved. 2) Spread whipped topping over cooled custard, serve and enjoy with friends.
