Chicken Cacciatore: 2 lbs boneless skinless chicken thighs 2 Tablespoons Extra Virgin Olive Oil 1 medium onion, chopped 1 large carrot, chopped 1/2 red pepper 1/2 green pepper 1 8 ounce package of baby bella mushrooms, halved 3 cloves garlic, minced 1/4 cup kalamata olives, quartered 2 teaspoon Thyme 2 Tablespoon Italian Seasonings 2 teaspoon Parsley 1 teaspoon Red Pepper Flakes 1 28 ounce can of Crushed Tomatoes 3/4 cup Dry White Wine or Low Sodium Chicken Broth 1/2 Tablespoon Balsamic Vinegar Salt & Pepper to taste 1 16 ounce package of pasta for serving Instructions 1. Warm 2 tablespoons of olive oil in a Dutch oven or a sturdy, deep pot over medium-high heat. Season the chicken thighs on both sides with kosher salt and black pepper. Once the oil is hot, add the chicken in a single layer. Sear the chicken for 3 to 4 minutes without moving to achieve a brown crust. Flip and cook for an additional 2 minutes on the other side, then transfer the chicken to a bowl. It doesn’t need to be fully cooked at this stage. 2. Lower the heat to medium. Add the chopped onion to the pot, cooking until they start to soften and release liquid, about 4 minutes. 3. Add herbs and spices and stir. 4. Add remaining vegetables, salt and pepper, and cook until softened, about 3-5 minutes. 5. Add the minced garlic, stirring for 1 minute until aromatic. 6. Pour in the white wine (or chicken broth), stirring to loosen any browned bits from the bottom of the pot. Allow the wine or broth to simmer and reduce by half, approximately 3 minutes. 7. Stir in the crushed tomatoes with juices, kalamata olives, and balsamic vinegar. Bring the mixture to a gentle simmer, allowing the sauce to cook uncovered for 10 minutes to thicken. Nestle the partially cooked chicken thighs into the simmering tomato sauce, adding any accumulated juices from the plate. Ensure the chicken is mostly submerged. 8. Cover the pot and let simmer for 15 to 20 minutes, until the chicken is cooked through, the sauce thickens, and mushrooms are tender. Adjust seasoning with additional salt and pepper as preferred. Serve hot over pasta, rice, or vegetables, topped generously with vegetables and sauce, fresh parsley or basil, and grated Parmesan. ENJOY! Have QUESTIONS or suggestions?
