Ingredients For 1kg of beef: • 1 tbsp thyme • 1 tbsp curry • 1 tbsp De-Gyma spice • Salt (to taste) • Seasoning cubes (to taste) • Chopped or sliced onions • Oyster sauce (a splash) • Dark soy sauce (a dash) • Garlic and ginger powder (or fresh, if preferred) For the tomato mix (pasta sauce): • Habanero pepper • Scotch bonnet pepper • Fresh tomatoes • Fresh garlic and ginger Instructions Step 1: Prep and Cook the Beef 1. In a clean pot, add your washed beef. 2. Season with thyme, curry, De-Gyma spice, salt, seasoning cubes, garlic & ginger powder, and chopped onions. 3. Let it simmer for about 20 minutes on low heat so it absorbs the spices. 4. Add water and cook until tender and juicy. Step 2: Roast and Blend the Tomato Mix 1. Assemble your tomatoes, habanero, scotch bonnet, garlic, and ginger in a baking tray. 2. Add your desired spices, drizzle with vegetable oil, and roast in the oven until the tomatoes release their liquid and the flavors deepen. • (Alternatively, you can cook them on the stove until soft and slightly charred.) 3. Blend into a smooth sauce. Note: I skip tomato paste because my hubby doesn’t like it. and trust me, the roasted mix brings more than enough depth! Step 3: Build the Sauce 1. In a hot pan, heat some vegetable oil. 2. Add your cooked beef and fry until it’s slightly crispy but still tender. 3. Add chopped onions and let them fry until fragrant. 4. Pour in the blended tomato mix. 5. Stir well, adjust seasoning, and add oyster sauce and soy sauce. 6. Let everything simmer until the sauce thickens and the oil floats to the top. A sign it’s well-cooked and packed with flavor! Step 4: Cook the Pasta 1. In boiling water, add a little vegetable oil and a pinch of salt. 2. Once the water comes to a full boil, add your pasta. Please don’t break it! 3. Stir occasionally to prevent sticking. Cook until al dente. 4. Drain and immediately transfer the pasta into the sauce. 5.
