It’s Caprese Chicken with roasted tomatoes, Butter Buds! I hope I didn’t throw you off too much (because you sure did to me with the tomato jam... 🤔that is a legit thing btw)! This delicious butterflied chicken is from our local butchery Happy Mango right here in Barrie! I’ve been enjoying this Caprese Chicken recipe for quite some time now and so happy I get to share it now! Are you ready to taste this!?!? Ingredients/directions 4 butterflied chicken breasts 1 cup pesto 12 slices of mozzarella cheese 6-8 slices of prosciutto 2 Tbsp olive oil Roasted Tomatoes 2 cups of cherry tomatoes 1 tsp fresh thyme (1/2 dry) 1 tsp vanilla extract 4 Tbsp olive oil Salt + pepper Preheat oven 375 degree for Roaster Cherry Tomatoes Prepare in a bowl adding ingredients with tomatoes (mix well) Place tomatoes on baking sheet aligned with aluminum foil Bake for 15-20 minutes Set aside! In a deep baking dish place butterflied chicken. Add your pesto to both sides (cover it all) Place your mozzarella and add some tomatoes Fold chicken wrapping prosciutto around tightly as you can Repeat for each chicken breast. Add remaining tomatoes to dish or chicken. Bake for 30 mins or more depending on size of your chicken! ENJOY!
