Fried Chicken Biryani Restaurant style: Chicken Fry biryani recipe is one of the unique and delicious biryani made in India. Hot & Spicy tender chicken is layered in a unique flavoured dhum cooked biryani. To make this special biryani chicken fry is prepared separately. Then mixed with biryani spices, yogurt, coriander, mint, fried onions and then layered with semi cooked basmati rice. On pressure both meat and rice slowly get cooked, allowing the recipe to release favours. Ingredients: Chopped onion: 1 medium sized onion Fried onion: Fried onion from 3 sliced medium sized onions Basmati rice: 750 grams Chicken pieces with bones and skin less: 1 kilo Bay leaves:4 Yogurt: 6 table spoons Chopped mint and Coriander Chopped tomatoes: 3 Cinnamon stick: 2 Cardamom: 5 to 6 Cloves: 5 to 6 Biryani masala: 3 table spoons Garam masala: 2 table spoons Coriander powder : 2 table spoons Cumin powder: 1 table spoon Black cumin: 2 table spoon Red chili powder: 3 table spoons Turmeric powder: 1/2 table spoon Ginger garlic paste: 2 table spoons Salt to taste Saffron soaked in water Oil : 8 table spoons of oil Butter or Ghee: 2 table spoons Direction: Place a bowl add 8 table spoons of oil and allow the oil to heat. mean while marinate the chicken with half table spoon of each spice powders like coriander powder, garam masala, cumin powder, red chilli powder, turmeric, Biryani masala powder, salt and 2 table spoons of ginger garlic paste & 2 table spoons of yogurt. Mix it nicely and shallow fry them in oil. Let the chicken nicely fried on all the sides of it. remove the chicken pieces once fried from vessel. Use the same vessel add onions and nicely fry them to golden brown colour, then add tomotoes and the remaining spice powders, half of the mint and coriander leaves, add 4 table spoon of yogurt and cook for about a minute or 2. Add the chicken pieces on to the masala gravy mix it well. Add half of the fried onions in to the chicken gravy and mix it. Swithoff the flame and keep it aside. In the other vessel boil the water add the whole spices like cardamom, cinnamon sticks, cloves, sahi jeera, salt and cook the rice to 80% half of the rice should be added as the first layer of the rice on top of the chicken pieces, garnish with coriander & mint and fried onions then add the 90% cooked rice on top of the first layer again garnish with corioander and mint and fried onions add 2 spoons of ghee and add saffron water on top of the rice. Seal the vessel with aluminium foil and close it with lid. On High flame cook it about 8 mins, then turn it on to low flame and cook it for 25 mins and rest it for 10 mins. then the fried chicken biryani is ready.
