It is made of protein rich gram dhal flour. Together with ghee and sugar, it tastes heavenly. Ever since we heard about the effects of sugar, it's only with guilt that we consume our favourite mysorepak. Here is an attempt to make mysorepak healthy by adding iron rich jaggery making it a healthy and tasty one. It is similar to the sugar recipe. It require a lot less time and ghee than the original one. Ingredients and method : Gramflour - 1 part Jaggery (powdered) - 2 parts Ghee + oil - 1.5+1.5= 3 parts Water - 1/2 cup First step: Melt ghee and measure 1.5 parts of gramflour. Any oil without lots of flavour can be used. I used groundnut oil. Any cup can be used for measuring. With the same cup measure 1.5 parts oil. Mix together. This needs to be heated simultaneously while preparing the recipe. Sieve and measure one part gramflour. Mix with oil ghee mix. Take enough oil ghee mix to dissolve it without lumps. Grease a deep container to pour the mysorepak with oil or ghee. Boil jaggery and water together to a syrup of one string consistency. Powder or grate before measuring. It can be strained once after dissolving to prevent dust and sand. When the jaggery reaches one string consistency add the gramflour and oil ghee mix. Mix well and cook in medium high. Once it is mixed well start adding oil ghee mix in small quantities. The oil ghee mix should be hot and should bubble when poured into the jaggery gramflour mixture. Mix until all the oil is absorbed. Keep mixing oil ghee mix in small quantities till the mix no longer takes. Roasted smell of gramflour, oozing out of oil ghee, whitebubbles, and the mix coming together as a single ball without sticking to the sides of the pan are the indication that mysorepak is ready. *Switch off and Pour it immediately to the greased container. Do not level it with a spoon. Tap it gently so that it spreads and is uniform in thickness. Let it cool. When it is a bit cool, using a knife cut it into desired shape partially. The mixture will be still sticky in the middle. So it is enough if the indent is made.This step will help in cutting it easily once it hardens. After it cools down well, cut it into desired shape.
