Traditional Irish Scones Recipe☘️ Ingredients (US & METRIC): 450g/ 1 lb/ 3 1/2 cups of self raising flour 50g/ 3 1/2 tblsp of softened unsalted butter 2 free range eggs 270ml/ 9.130 fl Oz of buttermilk or sour milk. Method: Preheat a Fan Oven to 220o C / 425o F Place the flour in a bowl. Add the softened butter and rub in with your finger tips until the mixture resembles fine bread crumbs. Place the eggs and buttermilk in another bowl and whisk. Make a well in the center of the flour mixture and gradually add most of the liquid to the flour mixture and mix with a fork or a wooden spoon until combined to a softish dough. Sprinkle a little flour on a board, on the baking tray and also on your hands. Shape the dough to a round of 2.5 cm/ 1 inch thick. Cut the dough into approximately 12 scones with a 5.5cm cookie cutter and place them on a baking tray as you are cutting them out. Brush the top of the scones with the little bit of left over egg and milk mixture. Place the scones on the second shelf from the top of a hot oven for approximately 10 to 15 minutes until the scones are golden on top. Serve at Breakfast with butter and jam and at lunchtime with your favorite soup, also good dipped in grated cheddar cheese and one or two small cherry tomatoes on top and popped under a grill for a few seconds.
