When it comes to braised beef, you absolutely have to use this cut for that perfect texture and a bit of a chew. First, I soaked the beef to get all the blood out, then marinated it thoroughly with soybean paste and sweet bean sauce. I also made a pot of fragrant aromatic oil, making sure all the flavors of the onions and spices were infused into it, then poured it into the pot to simmer slowly with the beef. Once it’s simmered long enough, the meat becomes firm, and the tendons turn translucent—it looks so appetizing. I sliced some beef to layer over hot noodles and added a ladle of the original braising broth; the smell alone makes your mouth water. I also made them a bowl of sour and spicy lemon dipping sauce to go with some freshly fried crispy peanuts.
