Blanch pork belly 5 min in ginger-scallion water. Rinse, scrape skin, cut into 5cm squares, tie with kitchen twine. 2. Sear all sides in hot oil until deeply golden. Set aside on rack. 3. Melt rock sugar in dry wok until deep amber caramel. Deglaze with Shaoxing wine (be careful — steam explosion). Add dark soy, light soy, stir. 4. Line clay pot with scallion knots and ginger. Place pork cubes skin-side-up. Add aromatics. Pour braising liquid over. Add hot water to 90% submersion. 5. Bring to boil. Reduce to the lowest possible flame. Seal with lid. Braise 1.5 hours. 6. Turn pork skin-side-down. Continue braising 45 minutes. 7. Turn skin-side-up for final 45 minutes, basting every 15 minutes. 8. Test with chopstick — it should glide through with zero resistance. 9. Rest, remove twine, strain sauce, reduce sauce to lacquer consistency. 10. Plate on blanched baby bok choy. Ladle sauce over. Garnish with scallion curls. Total active time: ~45 minutes | Total cook time: 3 hours 30 minutes ───────────────────────────── 🏛️ THE HISTORY OF DONGPO PORK ───────────────────────────── Dongpo Pork (东坡肉) takes its name from Su Shi (苏轼), the renowned Song Dynasty poet, calligrapher, and statesman who wrote under the pen name Su Dongpo. During his governorship of Hangzhou in the 11th century, he is said to have devised this slow-braising technique — cooking pork belly with Shaoxing wine, soy sauce, and rock sugar over a very low flame for hours. He even wrote a poem about it: "洗锅净, 少著水, 柴头罾焰烟不起, 待他自熟莫催他, 火候足时他自美" — "Wash the pot clean, use little water, let the wood fire smoulder without smoke, wait for it to cook itself without rushing — when the timing is right, it will be beautiful by itself."
