Twitter: / jancharles Pinterest: / jancharles Ingredients: Leftover cornbread (or a pan of freshly baked cornbread) 1 pound of bacon, crumbled 1 package of ranch dressing mix (optional) 1 stalk of celery, chopped 1 red onion, minced 2 cups of diced tomatoes 1 bell pepper, chopped 2 cups of mayonnaise (or more, depending on preference) Black pepper, to taste Red pepper flakes (optional) Hot sauce (optional) Instructions: Crumble the leftover cornbread (or bake a fresh pan of cornbread) and place it in a large bowl. Add the crumbled bacon, ranch dressing mix (if using), chopped celery, minced red onion, diced tomatoes, and chopped bell pepper to the bowl. Mix the ingredients together until well combined. Add the mayonnaise to the bowl and mix well. Add black pepper to taste and red pepper flakes (if using) to add a little heat. Stir the ingredients until everything is well combined and coated in the mayonnaise. Chill the cornbread salad in the refrigerator for at least an hour before serving. Serve the salad with hot sauce (if desired) on the side. Enjoy your delicious and easy-to-make Cornbread Salad!
