Watch me eat and talk about Northern-style Vietnamese Phở right outside of my apartment in Hanoi city. This is the most common style of Phở that you'll find in northern Vietnam. Northern Phở has a more simple and clear broth, with wide noodles, green onions, and doesn't use a lot of herbs or condiments to spice up the dish. Souther Phở uses thinner noodles, a lot more herbs and meat, and includes lots of additional condiments to really spice up the slightly sweeter broth, such as Sriracha and Hoisin sauce. Most Phở restaurants in America serve Southern-style Phở, since the diaspora of South Vietnamese in the 1970's brought their style of Phở with them. Phở was originally created in northern Vietnam, not far from Hanoi, and over time spread south and evolved along the way. You can still hear people in Vietnam debating over which Phở is the better version. I like them both a lot, but I prefer the northern style more for its simplicity.
