Let us know how yours turned out in the comments section. Also please let us know about your recipe requests. Palak Paneer with Stuffed Mushrooms Recipe: INGREDIENTS: 1. Button Mushrooms: 8-10 (stems removed) 2. Paneer: 75gm (cubed) 3. Baby Corn: 4-5 (cut diagonally) 4. Sweet Corn: 2 tbsp 5. Onion: 1 large (chopped) 6. Spinach Leaves: 1 cup (blanched and pureed) 7. Tomato: 1 large (pureed) 8. Ginger + Green Chilli Paste: 2 tsp 9. Garlic Paste: 1 tsp 10. Lime Juice: 1 tsp 11. Sugar: 1 tsp 12. Salt to taste 13. Cumin Powder: 1/4 tsp 14. Coriander Powder: 1/2 tsp 15. Turmeric Powder: 1/4 tsp 16. Cumin Seeds: 1 tsp 17. Garam Masala Powder: 1 tsp 18. Kasoori Methi: 1 tsp 19. Yogurt: 1 tbsp. 20. Fresh Cream: 2 tbsp 21. Vegetable Oil: 4 tbsp. Ingredients: for Stuffed Mushrooms 1. Cheese Cube: 1 (grated) 2. Paneer: 25gm (grated) 3. Garlic Paste: 1/2 tsp 4. Coriander Leaves: 1 tbsp. (chopped) 5. Salt to taste 6. Red Chilli Powder: 1/4 tsp 7. Chaat Masala: 1 tsp 8. Black Pepper Powder: 1/2 tsp PREPARATION: To make the Stuffed Mushrooms: Mix all the ingredients for the stuffing in a bowl. Stuff the mixture into the mushrooms. Set aside. To make the gravy: Heat 2 tbsp. vegetable oil in a pan. When the oil is hot, fry the stuffed mushrooms till they turn slightly golden in colour. Flip them over and fry till golden on both sides. Remove on a plate and set aside. In the same oil, add the paneer cubes. Fry till they turn golden. Remove into a bowl and keep aside. Next, add the baby corns and sweet corn. Saute for 1-2 minutes. Remove into a bowl and keep aside. Heat 2 tbsp oil in the same pan. Add cumin seeds and let them splutter. Add chopped onions, saute till the onions become golden in colour. Next add garlic and ginger-green chilli paste. Saute till the raw aroma goes away. Add tomato puree. Keep stirring. Once the fat releases from the sides of the mixture, add the dry spices, turmeric powder, coriander powder and cumin powder. Mix well. Add yogurt and mix well. Add the palak puree and mix well. Add lime juice. Mix well. Add garam masala powder followed by sugar and salt. Mix well. Add the corns and paneer cubes. Stir gently. Cook on a low flame for about 1-2 minutes or, till they become soft. Add fresh cream. Stir gently so that the cream gets incorporated into the palak gravy uniformly. Add about 1/2 cup water or as required. Stir well. Simmer for 5-6 minutes. The gravy will thicken a little. Add the stuffed mushrooms. Stir gently so that the stuffing does not come out. Cover and cook on low flame for 1-2 minutes. Lastly, add kasoori methi and mix gently. Switch off the flame. The Palak Paneer with Stuffed Mushrooms and Corns is ready to serve.
