After that, a special mix of masalas (spices) is sprinkled in, giving the sev its unique flavor and spicy punch. 🔥💥 Now comes the mixing! Water is added gradually, and the worker mixes everything by hand with love and expertise, turning it into a soft yet thick dough. 🙌 Watching this part is oddly satisfying and shows how manual labor still powers some of India’s best foods. 💪🧂 With the dough ready, the frying process begins. A massive iron kadai is heated with hot oil bubbling inside. A round-shaped metal utensil with holes (called sev sancha) is placed on top, and the dough is forcefully pressed through the holes using hands. As the dough comes out, it directly falls into the hot oil as tiny strings – the iconic shape of sev! 😍🍜 The team keeps working with speed and rhythm, repeating the pressing and frying until the dough is used up. Once golden and crispy, the fried sev is removed from the oil using a large skimmer and transferred to a wide tray. ✨ But wait, the oil-removal step is fascinating! The sev is placed into a rotating round machine, which spins quickly to remove all the excess oil. This not only makes the sev healthier but also improves its shelf life. 🌀⚙️ After de-oiling, the sev is cooled naturally in open trays.
