It might seem way out of season but we’re still making fruit juice from the summer soft fruits we harvested way back when. Blackcurrants, redcurrants and raspberries. We freeze them just as they come off the bush and from time to time we juice some. Ours is a Westfalia Saftgewinner – but they’re probably all similar. Yes, you can put them in with leaves and twigs and all – so a huge amount of time is saved. This method of juicing produces a concentrate – it collects in the reservoir and is released from time to time down the pipe – which is also sterilised in the process. Which means that if it goes straight into sterilized jars then it should keep a while. Adding the sugar at this stage helps preserve it too. How much sugar? Well, it depends on the sugar content of the berries, and also in what you want it for. We put in 110 grams per litre jar. You can steam all sorts of other things in these juicers – but the only things we’ve tried so far would, frankly, be better preserved in other ways. Blackcurrants are the best – beetroot, no thanks! What else should I say? I don’t remember any of the varieties of bushes – sorry. They all do well in this climate and blackcurrants produce bucketsful in even the most miserable summers. They are a very generous plant and everyone should have lots of them. The juice needs diluting and it tastes just like ribena – probably because this is just how they make ribena.
