BESAN KI MASALA ROTI Ingredients 1 cup gram flour (besan) ½ cup whole wheat flour (atta) + for coating Salt to taste 2 tablespoons ghee + for basting Yogurt for serving Masala 1½ teaspoons cumin (jeera) powder ½ teaspoon coriander powder ¼ teaspoon turmeric powder ½ teaspoon red chilli powder 1 green chilli, finely chopped Salt to taste ½ teaspoon dried mango powder (amchur) 1½ tablespoons ghee Method 1. To prepare masala, mix together cumin powder, coriander powder, turmeric powder, chilli powder, green chilli, salt, dried mango powder and ghee in a bowl. 2. Mix together gram flour, wheat flour, salt and 2 tablespoons ghee in another bowl. Add sufficient water and knead into a soft dough. 3. Divide the dough into equal portions and shape into balls. 4. Coat each ball with some wheat flour and roll out into semi-thick disc. 5. Spread some masala in the center of each disc, fold into crescent shape and lightly press the edges to seal. Further fold them into triangles and lightly press the edges to seal. 6. Coat each triangle with some wheat flour and roll out into semi-thick triangle sheets. 7. Heat a non-stick tawa. Place each triangle sheet and roast from both sides till golden brown, basting with some ghee. 8. Serve hot with yogurt.
