Music: Cuba Musician: ASHUTOSH Music: sleigh ride Musician: home for Christmas Caramel Pecan Turtle Clusters yields: about 46 Ingredients: •1 cup unsalted butter •1/2 cup corn syrup •3/4 cup Sweetened condensed milk •1 cup packed brown sugar •vanilla extract (optional) •2 cups pecans •900G milk chocolate chips •Salt for taste and candy Sprinkles for decorating 1) Melt and cook on Med/Low heat for 10-15 min the first 4/5 Ingredients, until the sauce has candied (turns and dark brown color, or if you scoop a small amount onto your spoon, let it cool, and it solidifies on your spoon.) 2)Melt chocolate chips using the double boiler method or in the microwave in 30 second intervals (stiring between each interval) 3) Toast pecans on the stove in a pan, careful not to burn. (5min) 4) Place 3 or 4 clusters of pecans on a baking sheet with parchment paper 1 or 2 inches apart 5) Drop a small dollop of Caramel on the pecan clusters to just over lap the pecans. Then place in fridge for 20-30min to solidify. 6) After you remove from fridge, drizzle the melted chocolate on top of the hardened Caramel. Then decorate with candy Sprinkles, and sprinkle a little salt to taste. Back In the fridge to serve for later, or in a zip lock bag and freeze for another day!! Delicious!!
