Rúnahild and Astralseid's Birch Sap Ceremony

As nature wakes up from her winter sleep, the life-giving sap rises back from deep within the earth up into the trees. For a few weeks, before the leaves sprout, we can collect some of the rejuvenating birch sap. We use it both to drink it fresh and to make syrup. It is the third year that we make birch syrup so our method is always evolving as we experiment and learn. This year, we have collected around 36 liters of sap which we boiled down to about 6 dl of syrup. The whole process took a bit over a week. Since the weather was mostly sunny, we did everything outside by our fireplace and it inspired us to film it and share with you.
