How to make Coffee Crumble Cake. So soft and fluffy that melts in your mouth. Here's what you'll need: Crumble Topping: 1/4 cup brown sugar (50g) 2 tbsp white sugar (30g) 1/2 cup flour (63g) 1/4 tsp salt (1g) 1/4 cup butter (55g) CAKE: 1/3 cup unsalted butter (75g) 1/2 cup white sugar (100g) 1/4 cup brown sugar (50g) 3 tbsp oil (36ml) 2 eggs 1 tsp vanilla extract (5ml) 2 tsp instant coffee (6g) 1 and 3/4 cup cake flour (175g) or all purpose flour 1 tsp baking powder (4g) 1/2 tsp salt (3g) 1/2 cup milk (125ml) 1. Preheat oven at 170C/340F. In a bowl, mix together brown and white sugar, flour and salt. Add cold butter and mix until it resembles wet sand. Set aside. 2. In a large mixing bowl, beat butter, brown and white sugar and oil until pale yellow. Then add eggs one at a time. Mixing after every addition. Then add vanilla and instant coffee. Mix well 3. Sift in cake flour (or all purpose flour), baking powder and salt. Mix just to combine. Add milk. Mix. 4. Grease a 7x7 inches baking dish/pan with oil or butter. Line with parchment paper. Place the batter. Top with crumble topping. Bake in a preheated oven at 170C/340F for 30 to 35 minutes or until tester comes out clean when inserted. 5. Let it cool down completely. 6.
