Easy guide on how to make Bánh Tét. It could be pretty intimidating to make bánh tét for the first time, however it only takes patience and heart to make the perfect bánh tét. Traditionally, we usually make this to gift during the Lunar New Year celebration. This is a must have during Tết. Bánh Tét is more common in the mid and southern parts of Vietnam, whole bánh chưng is in the north. The only difference is the shape, while the fillings are quite similar. Bánh tét is round like cylinder, while bánh chưng is square like a box. Ingredients: 4 lbs pork belly 1 lb mung beans 3 lbs banana leaves 5 lbs glutinous rice 5 scallion heads 1 shallot salt sugar black pepper chicken bouillon strings to wrap Instruction: Mung beans- 1. Wash and rinse mung beans till clear water. Soak the mung beans overnight or at least 8 hrs. Rinse and strain dry. 2. Season mung beans with: 1 tsb salt, 1 tsb chicken bouillon, 1 tsb black pepper, 1 tbs oil, Mix evenly and set aside. Glutinous rice- 1. Rinse and wash rice till water runs clear. Soak rice for at least 2 hrs. Rinse and strain dry. 2. Season glutinous rice with: 2 tsb salt, 2 tsb chicken bouillon, 2 tbs neutral cooking oil. Mix evenly and set aside. Pork belly- 1. Cut pork belly 1/2 in thick and 12-14 in long. 2. Wash pork with salt and lime. Rinse and let dry. 3. Season with: 1 tbs salt, 1 tbs sugar, 1 tbs chicken bouillon, 1 tbs black pepper, 5 scallion head (minced), 1 shallot (minced), 2 tbs cooking oil. 4. Let marinate for at least 3 hrs. Banana leaves- 1. Thaw under cold water. 2. Rinse and Wash delicately. 3. Wipe dry with clean towel. And split into 4 sizes. 1) 12-14 in length(no rip). 2) 2-2.5 in length 3) leftover For rolling instruction please watch video. Cooking time: 1. 6-8 hrs depending on how much in pot. 2.
