Short Rib Bolognese Sauce With Fettuccine 1. First In A Large Flat Bottom Pan.. 1/4 lb Bacon Or Pancetta 2. Remove Bacon & Drain. Then Continue Cooking Full Recipe In The Bacon Grease. 1 lb Boneless Beef Short Ribs, Cut Into Cubes 3. Browned In Bacon Grease Then Remove To A Plate, Then Sauté The Vegetables For 5-6 Minutes. 1 Cup Celery, Diced 1 Cup Carrot, Diced 1 Cup Onion, Diced 4. Add The Garlic & Sauté 1 Additional Minute 2 Tbsp Garlic Minced 5. Stir In The Paprika & Tomato Paste, Then Cook For A Few Minutes To Remove The Raw Tomato Flavor 1 Tbsp Paprika 4 Tbsp Tomato Paste 6. Deglaze The Pan With Wine Scraping All The Bits From The Bottom Of The Pan, Reducing Wine For A Few Minutes 1 Cup Dry White Wine, Chardonnay 1 1/2 Cups Beef Broth 1 (28 oz) Can Of Crushed Tomatoes 1 Tbsp Italian Seasoning 1 Tbsp Balsamic Vinegar 7. Simmer With A Lid On For 2-3 Hours, Checking & Stirring Frequently. If It Appears To Dry, Add More Beef Broth. 1/2 Cup Beef Broth 8. Start Boiling Water For Fettuccine Noodles 8-12 oz. Fettuccine Noodles 9. In The Ragu Pan, Add Heavy Cream & Grated Parmesan Cheese. 1/4 Cup Heavy Cream 1/2 Grated Parmesan Cheese 10. Simmer On Low Until The Cheese Is Melted Through. Then Add The Noodles To The Bolognese Sauce & Stir. Serve With Italian Bread To Soak Up The Sauce!!
