Pineapple Upside Down Cake: Backpack Baking from Cookies Cupcakes and Cardio

Learn how to make a pineapple upside down cake, while we take you on an backpack baking adventure to Top of the World Provincial Park in the Canadian Rockies. Ingredients used in this recipe: 2 Tbsp butter or margarine (30g) 1/4 cup brown sugar (45g) 5 pineapple slices/rings 3/4 cup AP flour (90g) 1 1/4 tsp baking powder 1/4 tsp salt 1/2 cup granulated sugar (100g) 2 tbsp butter or margarine (30g) 1/2 cup milk (any %) (125mL) 1 egg If baking at home, use an 8" cake pan and bake at 350F for 40-45 minutes. Turn upside down immediately upon removal from oven and all to sit for a couple of minutes before removing pan.
