My Air Fried Zucchini Fritters with Feta and A Dash of Lemon!

Welcome to Easy Delicious Cooking. These Zucchini Fritters are an Easy Family Meal and healthier when Air Fried. Served on their own, or if you prefer, served as a cooked vegetable for another meal, or make them smaller and they become hors d’oeuvre when you’re hosting a party. Keep the egg and the feta out of the recipe and you have a vegetarian meal. It’s yours to change it anyway you want. In all my videos I try to encourage you to enjoy the cooking process as much as the sharing of yourself without conditions. It’s all about family and friends. People bond through food. THE RECIPE. INGREDIENTS: For the fritters. 500gm / 17.6 oz of coarsely grated zucchini Salt and pepper to your taste, 4 tbls of Olive oil, 3 small to medium spring onions / scallions finely diced, 2 tbls of finely chopped dill (you will need 3 tbls all together, leave some for the yoghurt dip), The zest of one lemon, ( If you like lemon sprinkle some juice on the cooked fritters.) 1 tsp of garlic powder, 1 white onion coarsely grated squeezed of any extra liquid, 1 whole egg, ½ cup of feta cheese broken and creamed with the back of a fork, 1 cup of Breadcrumbs, ½ cup of cherry tomatoes sliced in half 2 tbls of plain flour For the yoghurt dip. 2.5 cups of good Greek yoghurt that is pot set and thick. 2 cloves of fresh garlic crushed and finely chopped for the yoghurt dip, (add more if you like garlic) 2tbls of olive oil to your taste, add more if you want, Salt to your taste, 1 tbls of white wine vinegar, (or more for your own preference), 1 tbls of finely chopped dill. Pepper to your tatste COOKING INSTRUCTIONS: Coarsely grate the zucchini. Sprinkle 1 tsp of salt over the grated zucchini and place in a sieve so any excess liquid can drain away. After 10 minutes lay the zucchini on a paper towel and pat it dry. Finely slice the spring onions and the dill, set aside. Grate the brown onion and squeeze any excess liquid out as well. Get the feta cheese and using the back of a fork break it up until it is smooth. Grate one lemon and set aside. ( You may want to use some of the lemon juice) In a large bowl mix the almost dry zucchini, spring onion, the grated white onion (which has been squeezed dry as well), the chopped dill, the zest of the lemon (and if you like some of the lemon juice as well), the feta cheese, the garlic powder, the egg, the pepper, some olive oil, and the flour. (The feta is salty, so be careful adding too much salt) Once thoroughly mixed add the Breadcrumbs and mix it in. Divide the mixture into even sized balls. Then, flatten the patties to the same width, brush both sides with some olive oil. Preheat the air fryer to 190C / 370F. Next put the fritters in the pre heated air fryer for 10-15 minutes or until golden brown. In a serving dish mix the yoghurt, the dill, the crushed fresh garlic, some salt, and the white wine vinegar. Add some olive oil to your taste. Mix well, taste it to correct the seasoning to your preference. The yoghurt should be thick and creamy. Serve the fritters together with yoghurt dip and the cherry tomatoes. Kali Orexi.
