Today we are making two protein forward healthy recipes that support gut health - and taste delcious. We are making The Healing Soup with Red Lentils (as we couldn't find Moong Dal) and we are making Tofu Mousse with coco, both protein forward and great for stomach comfort. The Carter Life (TCL) is all about everything we eat, recipes we try and healthy alternatives & mindful eating to reach my 200 pound weightloss goal. Question: Have you ever heard of Moong Dal? Ingredients: 1 cup - Split Yellow Moong Dal or Red Lentils (washed until water runs clear). 3 cups - Chicken Broth (for that extra collagen/protein) 1/2 tsp - Turmeric Powder. 1/2 tsp - Ginger Paste (great for nausea). A tiny bit of salt to taste. Instructions: Put the lentils, broth, turmeric, and ginger in a pot. Bring to a boil, then turn the heat down to low and cover. Simmer for about 20–25 minutes until the lentils are totally soft and falling apart. The Secret: Use a whisk or an Cuisinart blender to make it smooth like her carrot soup. If it’s too thick, add more broth. Chocolate Mousse 1 package - (12–14 oz) Silken Tofu (it must be Silken 1/2 cup - Cocoa Powder (unsweetened). 1/2 cup - Honey or Maple Syrup 1 tsp - Vanilla Extract. A pinch of salt (to bring out the chocolate). Instructions: Drain any excess water from the tofu. Put everything into a blender or food processor. Blend until it is completely smooth (no white streaks!). Chill in the fridge for at least an hour.
