(laughs) And it's a great tradition. And we still smoke the old-fashioned way in brick kilns using oak log fires, and it's then smoked for two days, and it's wonderfully smokey, sort of creamy, delicious taste." 11. Mid shot champagne being poured into glass 12. Wide shot stall selling champagne 13. Close up man drinking champagne UPSOUND ( English): "beautiful, absolutely beautiful." 14. SOUNDBITE (English) Tim Jarvis, Jarvis of St James Champagne: "It depends at what level you're buying. If you want to buy the premier cru at 24, 25 pounds (39$, 41$ US Dollars), that's not a luxury. I mean, you know, a good bottle of wine is 15 pounds (25$ US Dollars), so 10 pounds (16$ US Dollars) more and you get a bottle of premier cru champagne. So that's not splashing out and being excessive. What's being excessive, I suppose, is going to a bar and spending 200 pounds (332$ US Dollars) on a bottle, that's excessive to me, I wouldn't do that. I'd rather drink it at home and have a better bottle of champagne at home." 15. Wide shot stall selling cupcakes 16. Close up cupcake with Santa legs sticking out 17. Mid shot cupcake display 18. SOUNDBITE (English) Laura Conway, Cupcake-a-licious: "Well everybody likes something a little bit festive, and, erm, so I actually came up with these designs last christmas. You've got the green ones which look like little christmas trees with the stars and the little baubles, and the christmas puddings and the father christmas hats, and everyone seems to really enjoy them, they're a little bit different from the usual christmas sort of cakes, you know a bit of fun." 25. Tilt down chocolate santas to chocolate snowmen 26. Mid shot chocolate santas 27. Pan chocolate boxes 28. SOUNDBITE (English) Ian Scott, L'Auberge du Chocolat: "We do a very interesting range of chocolates with some wonderful flavours like sesame and wasabi, strawberry and balsamic. We do a chili chocolate and we also have a very interesting one which is for those who are lactose intolerant, which is a caramel which is actually a goats cream butter caramel. And that's part of our dairy-free aspect of the range." 29. Mid shot christmas cakes and cookies 30. Close up box with little christmas puddings 31. Mid shots bags with gingerbread men 32. Wide shot stall selling silicone baking moulds 33. Close up silicone muffin baking mould 34. SOUNDBITE (English) Simon Lycett, Florist and decorator: "I think there's less going out and people are going to make their own cakes, they're going to make their own puddings. I think people are going to make presents and give to people, so cookies, minced pies, truffles, all those sorts of things." 35. Wide shot people walking through food fair 36.
