Hey guys! Thank ya'll for tuning in once again! Luckily we had a window of good weather after catching the crawfish where we could go set a few trotlines in the river! We didn't get a huge haul, but we got enough to eat! We have been wanting to try some smoked fish dip, and we have never had any with catfish, so we gave it a go and it was absolutely delicious! Smoked Catfish Dip: 3-4 catfish filets (smoked) 8 oz cream cheese softened 8 oz sour cream 1/2 tsp dill 1/2 tsp fresh lemon juice (some zest) ! bundle of green onions chopped ( about 1/4 c) Dash of Old Bay seasoning (to taste) Dash of garlic powder (to taste) 1 tsp Worcestershire sauce Dash of favorite hot sauce (to taste) -Directions: Smoke fish filets on 190 degrees for about 1 hour. Let cool completely. Finely chop filets in food processor. Add chopped fish to bowl with cream cheese, sour cream, and all other ingredients. Stir to mix well ( should be spreadable consistency) Serve with club crackers, or your cracker of choice. Enjoy!
