Hi welcome to Caribbeanj03. Thank you for coming into the kitchen with me. Today, we will be making a pot of stew red kidney beans in the instant pot. Ingredients: 1 1 lb pack fresh red kidney beans (1 lb raw red beans) 1 tbsp garlic powder (3 medium gloves garlic) 1 tbsp onion powder (1/2 medium onion chopped) 5 plus bay leaves 4 cups water 1 bell pepper 1 tbsp cooking oil (bacon fat, optional) 1 medium onion chopped 1 tsp ground black pepper 1/2 tsp ground oregano 1/2 tsp basil Instructions: Soaking kidney beans (Optional) 1) Clean the beans to remove stones and other dirt. Wash them once and soak them in clean water for about 8 hours. You can soak them overnight as well. 2) Beans will absorb the water and will increase in volume. 3) Discard the water from soaked kidney beans and wash them a couple of times. Instant pot kidney beans 1)Take the rinsed kidney beans into the Instant pot inner pot. 2) Add water, garlic powder, onion powder, bay leaves and close the Instant pot with its lid. 3) Start the instant pot in manual or pressure cook mode and cook on HIGH pressure. For dried or unsoaked beans, cook it for 40 minutes on HIGH pressure. 4) While beans is cooking. In a small frying pot and cooking oil or bacon fat over medium heat. 5) Add chopped bell pepper, chopped onion little salt and ground black pepper. Sauté the onion, bell pepper, in oil for 5 to 7 minutes until lightly browned. This will add more flavor to the beans, 6) Set aside until beans is soft and ready. 7) Once the instant pot turns off, wait for 15 minutes and manually release the pressure. 8) Perfectly cooked kidney beans are ready to use in your recipes! 9) Add ground oregano and basil bring to a full boil on sauté for 30 minutes Note: 1) Stewed beans should have a creamy texture. Make sure to cook the beans long enough, and you can also smash some of the cooked beans with a wooden spoon to make the broth creamier. 2) You can add meat like pork tails, ham and some people add sausage.
