Follow The Spirit Specialist on social media: Facebook:   / specialistspirit   Twitter: @spiritspec Instagram: @thespiritspecialist One of the more unusual experiments from the Spirit of Yorkshire team, new make spirit distilled in 2017 was initially matured in first-fill Bourbon barrels for 3 years and 3 months – as is the standard procedure for core releases - before being transferred in four barriques that had previously held – and I apologise profusely in advance to any Spanish-speaking people watching - Vino Naranja del Condado de Huelva. Normally the term ‘orange wine’ denotes a wine made with white grapes in which the skins, seeds and even stems are left with the pressed juice during fermentation to produce an amber colour. However the Condado de Huelva orange wine – which is protected under its own denomination of origin – is actually an aromatised wine, with the addition of a base grape spirit macerated with bitter orange peels or bark, and then cask aged in a solera system for at least 2 years. The whisky was diluted down to 50% ABV before entering four orange wine barriques and maturing for a further 3 years and 10 months – resulting in a total aging of just over 7 years. As the point of disgorgement the ABV had reduced down to 46.2%, and no further dilution took place before bottling, with only 1,100 bottles available for purchase.
