You’ve never seen candy made like this – straight from winter melon in village kitchens! 🍬 The journey begins in the countryside, where fresh, big winter melons are cut one by one. A small amount of edible quicklime is poured into a bowl and mixed with water. After that, the melon is cut in half and peeled thoroughly. Next, the melon is cut into pieces, then further sliced into small desired pieces. These are placed in a bowl, lime water is added, and the mixture is left overnight to cool and achieve that unique texture. The following morning, the winter melon pieces are washed completely clean, then soaked again in water and left to rest overnight. By the next morning, the melon strips are blanched in boiling water for five minutes. Once done, they are transferred to a bowl, pickled in white sugar, and left for two days. After two days, the strips become hard and sandy. They are boiled again over high heat, then stir-fried continuously until the water dries up. The heat is turned off, and the stir-frying continues until the strips turn sandy, crispy, and finally transform into delicious winter melon candy. But that’s not all—more winter melon slices are prepared. A little salt and rock sugar are added to boiling water, and the melon slices are blanched for one minute, then rinsed in ice water. Juice is then made from the melon slices, filtered through a cloth, and poured into jars. Honey is added for sweetness and lemon for a refreshing taste, making it the perfect drink to enjoy alongside the fresh candy.
