EC-1118 cs K1-V1116, the result. It's now been a few months of aging, and the results are in. I need to change my opinion of Champagne Yeast. I still contend it was NOT meant for actual fermentation, but instead as a secondary fermentation simply to make carbonation, but... it does a fine job, at least with this one wine. I'll try it in other things too, just to be sure, but so far, I've no issues using it.
