This recipe puts a twist on old fashioned baked macaroni and cheese replaced evaporated milk with tomato sauce and puts fresh tomatoes on top, adding both flavor and color. Along with a cheddar and sour cream topping, this casserole is full of flavor. If you like the classic comfort food but want to try something different, especially if you want to use some garden-fresh tomatoes, this recipe is for you! Overall, this mac and cheese was fantastic--the tanginess of the tomatoes combined very well with the bite of the cheddar. The sour cream added even more tanginess, and the Italian spices added some nice flavor--I was glad I decided to add them. Although this was great, some people may have been disappointed with the tomato flavor. This definitely had a tomato flavor, but not as strong as you might expect. If you want a very strong tomato flavor, I suggest adding a 6 oz can of tomato paste: that will definitely take the tomato flavor to the next level. Like I said, this mac and cheese was a nice change of pace.
