Meanwhile, in a heavy‑bottomed pan, we melt jaggery with a little water (and optional ghee) on low heat, stirring continuously until it reaches the soft crack / hard ball stage (you can test this by dropping a little syrup into cold water). At that moment, we quickly mix in the crushed peanuts, combine thoroughly, and pour the hot mixture onto a greased surface or parchment paper. Using a rolling pin, we spread it into an even sheet, then while it’s still warm, score cuts in our desired shapes (squares, diamonds). Finally, after letting it cool and set completely, we break it into pieces and store in an airtight container.
