I am very glad I went with an induction stovetop/cooktop rather than a gas or propane stove! There is something special about knowing you're utilizing energy from the sun and from driving to cook your food. Energy consumption is a big consideration when you rely on induction to cook in the van life, but I have found a way to make it work quite comfortably. It was also a huge benefit to be able to avoid drilling an extra hole in the van (if I were to have gone with propane, I'd have had to vent it properly).
