Asian Chicken Chopped Salad PREP TIME: 20 min | COOK TIME: 15 min | SERVES: 4 Ingredients: • 1 bag Asian chopped salad • 1 small tomato chopped • 1 ear of corn roasted • 2 chicken thighs Marinade for chicken: – 1/4 cup apple cider vinegar – 1/4 cup honey – Salt and pepper to taste – 1 Tbsp. Dijon mustard – 1 Tbsp. chopped garlic Dressing: – Included dressing from salad bag – 1 Tbsp. apple cider vinegar – 1 Tbsp. sriracha – 1 Tbsp. sesame oil – 3 Tbsp. mayo Candied cashews (optional): – 1 cup raw cashews – 1 Tbsp. butter – 2 Tbsp. honey – Salt and pepper to taste Directions: 1. Marinate chicken thighs in apple cider vinegar, honey, salt, pepper, Dijon mustard, and garlic. 2. Cook chicken until golden brown then chop into bite-sized pieces. 3. In a bowl, combine included dressing, apple cider vinegar, sriracha, sesame oil, and mayo. Stir to combine. 4. For candied cashews, heat a skillet over medium-low heat. Add cashews, butter, honey, salt, and pepper. 5. Stir constantly until cashews are slightly browned. Remove from heat and spread on a plate to cool. 6. Combine bag salad, tomato, corn, and dressing. Toss to combine. 7. Top with chicken and candied cashews. Advice: • For a gluten-free option, use candied cashews instead of wonton strips. • Optional: Add toasted cashews to the top once the salad is tossed.
