Stumped as to what to make for dinner? Try These Gluten Free Dairy Free chicken nuggets that are easy and use what you have in your pantry. Kids will love these! Serve with some french fries for a fun hearty meal. And they are baked not fried. Ingredients: 2 Boneless skinless chicken breasts cut in 1" cubes 3/4 C. Gluten Free Biscuit mix (I used Betty Crocker) 1/4 C. GF cornstarch 1 t. Smoked or sweet paprika 1 t. Salt 1 t. Pepper 1/4 t. Poultry seasoning 1 t. Garlic powder 1 t. Onion powder 1/2 -1 t. Chipoltle powder (for an extra kick, add 1/4 t. cayenne powder) 2 Eggs slightly beaten 2 T. Dairy free milk 1 Pkg. Stuffing mix ground up fine in a food processor or rolled in a plastic bag with a rolling pin ( I used Aldi's gluten free stuffing mix. Directions: Mix biscuit mix, and spices in a bowl big enough for coating chicken Mix eggs and milk in a bowl Put crumbs in another bowl Dip chicken in flour mixture Dip in egg mixture Cover with crumbs Place on a sprayed rack on a foil-lined cookie sheet OR on foil that has been sprayed. (I like to use the nonstick foil) Bake at 425 for 20 minutes. Check with a food thermometer stuck in the largest piece to 165 internal temp. Use the dipping sauce of your choice. I made 37 of these. NOTE: I KEPT SAYING ALDI'S STUFFING MIX IN MY VIDEO WHEN I MEANT ALEIA'S STUFFING MIX WITCH IS GLUTEN FREE AND DAIRY FREE. I BOUGHT THIS BRAND ON GLUTEN FREE PALACE ON THE WEB. SORRY FOR THE CONFUSION. Other brands that are gluten free and dairy free are Whole Foods brand and Three bakers that is expensive. READ YOUR LABELS.
