Phirni also called Firni is a creamy-smooth rice and milk sweet dish filled with almonds, pistachio, saffron and rose water to enhance its taste and aroma. This dessert is extremely popular in lot of countries and mainly associated with Eid and Ramadan. It is as delicious as it is easy to make. The rich flavor of Phirni definitely satisfies your sweet tooth. Its one of the best dessert which you can easily make on any special occasion. Don’t forget to serve it to your guests! Ingredients: 4 cups Milk 4 tbsp Rice 5 tbsp Sugar ¼ cup Khoya (mawa) ½ tsp Cardamom powder ½ tsp strands of Saffron ¼ cup Pistachio (crushed) ¼ cup Almonds (crushed) 2 tsp Rose Water Instruction: 1. First soak the rice in water for at least an hour. 2. Now grind rice with 2-3 tbsp water to a fine paste. 3. Now put pan on heat, add milk and keep the heat high. Keep stirring milk in between. 4. When milk is warm, take out 2-3 tbsp milk to soak the saffron. We will use it later on. 5. When milk is about to get a boil add almonds, pistachio and cardamom powder. Give it a stir to mix them well and wait for the boil. 6. Keep stirring milk continuously. When it gets a boil, lower the heat to medium and wait till milk stops bubbling. 7. Now add rice paste while continuously stirring to avoid creating any rice lumps. 8. Keep boiling mixture on medium heat for around 10 minutes till rice and milk thickens. 9. When the mixture start thickening add khoya and soaked saffron, give it a stir till they mix well. 10. Now boil for 5 mins on medium heat, slowly mixture will start getting light-yellow color from saffron. Remember to keep stirring in between to avoid mixture stick to bottom. 11. Finally add sugar, rose water and give it a good mix and cook for 2 mins. 12. Switch off the gas, Phirni is now ready. You can eat it warm or put it in a freezer till it gets nice cold. Tips n Tricks 1. Continuously stir milk while adding rice paste to avoid any lumps. 2. If you want even smoother Phirni add rice flour instead of rice paste. 3. If you are not getting right yellow color you can use 1 or 2 drops of yellow food color or you can even use ¼ tsp turmeric powder. 4. If you don’t have saffron you can still make it with other nuts, it still tastes awesome. 5. Warm and ice cold Phirni both have their own taste.
