Mixing Ajjwain Powder with Wheat Flour: In a large mixing bowl, take 1 cup of whole wheat flour (atta). Add the ground ajjwain powder to the wheat flour. Kneading the Dough: Gradually add water to the flour-ajjwain mixture and start kneading the dough. Knead the dough until it comes together and is smooth, soft, and pliable. You may need around 1/2 to 3/4 cup of water. Resting the Dough: Cover the dough with a damp cloth and let it rest for about 15-20 minutes. This resting time helps the dough to relax and become easier to work with. Dividing and Shaping the Dough: After resting, divide the dough into small portions and shape them into round balls. Roll out each ball into a flat round disc using a rolling pin. You can make them as thin or as thick as you prefer. Cooking the Ajjwain Ka Aata Roti: Heat a tawa (griddle) over medium heat. Place the rolled roti on the hot tawa and cook for a minute or so on one side until you see bubbles forming. Flipping and Cooking: Flip the roti to the other side and let it cook for another minute. You may press gently with a spatula to encourage even cooking. Final Steps: If you like, you can apply a little ghee or butter on both sides of the roti while it's cooking. Once the roti is cooked and has golden-brown spots, remove it from the tawa. Serve Hot: Serve the freshly cooked ajjwain ka aata roti hot with your favorite curries, vegetables, or chutneys.
