Rendering in HDR is a time consuming process that most people won't even reach most people. It requires your viewers to have a device that supports HDR. While that's becoming more and more common with newer mobile devices, PCs are another story. The user needs to have a graphics card that supports HDR, along with a monitor that does as well. So while I'm sure in another 3-5 years, most people will have HDR devices, you're still only reaching a fraction of your viewerbase when outputting HDR content.
