Ingredients Moong Dal 1 1/4 glass (split and without skin) Coconut 3 glasses Jaggery. 3 glasses (according to your sweet) Cardamom 4 ( if powder 1/4 tsp) Cashew Nuts 10 Raisins 15 Coconut pieces. ( cut small and thin 2 tbsp) Ghee 3 tbsp water (warm water as required ) METHOD Take moong dal and make into 3 portion ( 1/2 + 1/2 + 1/4 ) keep in different bowels Wash and drain well. Roast them separately. Keep the pan on stove and flame on medium ( If required you can add little ghee while roasting) 1/4 portion Roast a minute.Just to change the raw smell. Next take one 1/2 portion and roast for 2 minutes to change its smell and colour slightly ( as shown in the video) The last 1/2 portion roast until it turns a nice roasted smell and change the colour. it may take 2 to 3 min. (pls see the video for the change of colour) keep aside. Next prepare coconut milk (Thick,thin & very thin) Next take a mixed jar and add grated fresh coconut.Then pour 3/4 th glass of water . Crush, squeeze and collect the First milk /Thick milk Add 1 glass of water to the same crushed coconut and grind a minute. After squeeze and collect the second milk /Thin milk Last pour 1 1/2 glass of water and grind well. Then Squeeze and collect the Third milk / very thin milk. keep all roasted moong dal together in a cooker and pour the Third milk / very thin milk also add 1/2 glass more warm water to it.(required amount of water to cook well ) Then close the lid and keep the flame on medium .cook well . (You can use any vessel to cook ) Meanwhile melt the jaggery with little water and filter it . keep aside. Now everything ready....will start to prepare Our Payasam. Take a thick bottomed pan (usually make with an Uruli) Keep the flame on medium...Pour the cooked dal and jaggery..let it cook until the dal absorb the sweetness. Add 1/2 tsp of ghee. When it cook and combine together with jaggery payasam comes in a superb taste. Keep Stirring...Let it cook until it becomes thick. (check the sweetness..At this point sweet must be little high.When we add milk finally it will come in correct sweetness ) After pour the second milk..Then do the same process.Kerp stirring.. Add crushed cardamom ..Let it cook together. when it became thick add the First milk or thick milk.. Note: After adding the first milk don't allow to boil well. The taste and appearance totally will get change.Just the bubble come up.... Thatz all.. when it starts to boil take and keep aside.(check the consistency) It becomes more thicker when it cools Next heat a pan and add 2 tsp ghee and roast coconut . Once it turns to brown add Cashews. When it runs to golden colour add the raisins Finally pour this in the payasam... mix well and close a min to absorb all taste and smell to the payasam.
