This tomato rice is super easy to prepare in one pot and takes upto only 30 minutes which is perfect for lazy tasty dinner recipe. One-pot Tomato Rice Recipe Ingredients: 1 cup rice (any variety) 2 cups water 4 to 5 medium-sized tomatoes, chopped 2 small, onion finely chopped 2 to 3 tbsp ginger-garlic-chili paste 1 tablespoon seed mixture (cumin, mustard, chana dal, urad dal) 4 to 5 cloves 1 small cinnamon 10 to 12 curry leaves 1/2 tsp asafoetida 1 tablespoon desiccated coconut (optional) Salt and pepper to taste 2 tablespoons cooking oil or ghee Instructions: Wash the rice 3 to 4 times until the water runs clear. Soak the rice in water for 30 minutes to 1 hour. In a blender, make a smooth paste of ginger, garlic, and chili. Set aside. Heat oil or ghee in a large pan over medium heat. Add the seed mixture (cumin, mustard, chana dal, urad dal) and sauté until they start to crackle. If you prefer, you can use only cumin or mustard seeds. add whole spice along with asafoetida and roast for a minute. Add the chopped onions to the pan and cook until they turn translucent. Add the prepared ginger-garlic-chili paste to the pan and sauté for a couple of minutes until the raw smell disappears. Add the chopped tomatoes and salt to the pan. Cook until the tomatoes turn mushy and release their juice Stir in additional spices you like and cook for about 30 seconds. If using paneer, add the cubes now and sauté for a minute. Add desiccated coconut if you prefer add water and salt and pepper and bring it to a boil . after add the soaked rice with water. bring it to a boil and cover Once the water starts boiling, reduce the heat to medium-low, cover the pan, and let it cook for 10 to 12 minutes until the rice is tender and the water is absorbed. Turn off the heat and let the rice sit covered for another 10 minutes to steam. Fluff the rice gently and serve hot with curd. #easy #dinner #ricerecipe
