A classic Romanian holiday bread, soft and fluffy, filled with a rich walnut mixture. Traditionally enjoyed at Christmas, it brings warmth, sweetness, and nostalgia to every celebration. Ingredients For the yeast mixture: 50 g flour 50 ml milk 1 tbsp sugar 5 g dry yeast For the dough: The yeast mixture 250 g flour 120 ml warm milk 60 g soft butter 50 g sugar 2 egg yolks + 1 extra yolk for brushing 1 tsp vanilla extract Grated orange zest A pinch of salt For the filling: 100 g ground walnuts 50 g sugar 15 g cocoa powder 1 egg white 30 ml warm milk 1 tsp vanilla extract Preparation: Mix all the ingredients for the yeast mixture in a small bowl. Cover with a towel and leave it to rise for about 30 minutes. In a large mixing bowl, pour in the warm milk, add sugar, the yeast mixture, egg yolks, vanilla extract, and orange zest. Mix well. Add the flour and salt, then the soft butter. Knead for about 20–25 minutes, until the dough is smooth and elastic. Cover with a towel and let it rise for 1 hour and 30 minutes. Meanwhile, prepare the filling: mix together the walnuts, sugar, cocoa, egg white, warm milk, and vanilla extract until smooth. Divide the dough in two. Roll out each piece into a rectangle, spread the walnut filling evenly, and roll it up tightly. Twist the two rolls together into a braid or spiral shape. Place it into a greased loaf tin, cover with a towel, and let it rise again for about 30 minutes. Brush with the extra egg yolk and bake at 180°C for 45–50 minutes, until golden brown. Allow to cool completely before slicing and serving. Pofta buna! Enjoy your meal!
