My Kitchen With Village Food presents - Soya chunks kofta curry recipe using special spices . Soyabean kofta curry recipe. INGREDIENT : Soya Chunks - 100 gm . Ingredients For Roasted Masala - Peanuts - 1 Table spoon ( Tbsp ) Coriander Seeds - 1 Tbsp Fennel Seeds - 1 Tea Spoon ( Tsp ) Black Cumin Seeds - 1/2 Tsp Cumin Seeds - 1/2 Tsp Fenugreek Seeds - 1/2 Tsp Cloves - 4 pieces . Ingredients For Soya Chunks Kofta ( Balls ) : Boiled potato - 1 Piece Medium Size Turmeric Powder - 1/2 Tsp Red Chili Powder - 1/2 Tsp Green Chili paste - 1/2 Tsp Ginger Paste - 1/2 Tsp Gram Flour - 2 Tsp Salt - 1/2 Tsp Other Ingredients : Sour Curd - 1 Tsp Tomato Paste - 2 Tbsp Ginger Paste - 1/2 Tsp Green Chili Paste - 1 Tsp Salt - 1/2 Tsp Turmeric Powder - 1 Tsp Kashmiri Red Chili Powder - 1 Tsp Garam masala Powder - 1/2 Tsp Ghee - 1/2 Tsp Water - 300 ml TEMPERING : Refined oil - 1 Tbsp Sugar - 1/2 Tea Spoon Cardamom - 2 Pieces Cinnamon - 2 Pieces Cloves - 2 Pieces Bay leaves - 2 Pieces Asafoetida - 1 Pinch Cumin seeds - 1/2 Tsp Dry red chili - 1 Piece PREPARATION : Preparation of Soya Chunks Kofta : Add salt & turmeric powder in boiling water then add soya chunks - stir for a minute - after swelling of soya chunks take them out from the pan - let it become cold then squeeze the water - then grind roughly & put these in a mixing bowl - grate a boiled potato and the masala pastes & powders and mix well - then make some soya balls and fry them - soya chunks kofta prepared. Preparation For Roasted Special Masala : Heat the pan to medium the add all the Spices ( For Roasted Masala ) and stir continuously for 2 minutes in low temperature - when the aroma comes then switch off the flame & take them out for cooling . After cooling use a iron mortar & pestle to make crush then rough powder . PROCESS : Heat the pan or kadhai then add refined oil then add all the tempering masala one by one then stir for 2 minutes in medium heat then add tomato paste and stir for a min then add green chili paste and ginger paste - stir for a minute the add salt & stir then add turmeric powder & kashmiri red chili powder then add prepared special roasted masala powder & mix well then add sour curd and stir in medium heat for 2 minutes when the oil leaving - add water & give a boil then add prepared soya chunks kofta - stir for a while then add garam masala powder & ghee - mix well .
