We break the burger glass ceiling by making a legendary meat mix by adding 50% ground bacon to 50% quality ground beef. What if we flexed on it, and made a magical bacon burger, perfectly marbled, with flavors that accentuate the bacon, resting under a blanket of amazing, creamy cheese, gettin’ all juicy and partying up with a whiskey rye mayonnaise, arugula, and fresh red onions? We use an amazing cheddar called Stripey Jack from our friends at Epicuse, and it has a great story behind it, just like you're going to make while eating these burgers. The arugula's natural peppery-flavor really brings another level to the boozy mayo, cheese and perfect meat mix. This is a burger that will put the heat in your hot girl summer. We used Stripey Jack we got from our friends at EpiCuse, and has a great compliment to the meat mix -Fresh arugula -Steak sauce -Salt and pepper -1 red Red onion -Fresh tomatoes -Brioche rolls Ingredients for the Rye Whiskey Mayo Sauce - -1 cup mayonnaise -1.5 shots of rye whiskey -Pinch of cayenne paper -4 Tbsp of ketchup Directions for the Rye Whiskey Mayo Sauce - -Mix all ingredients evenly, set aside Directions for the Bacon Infused Burgers - -Mix the ground bacon and ground beef -Add in the 1 Tbsp of steak sauce per burger (we like making 1/3 lb. burgers) -Mix the meat again, and then form 3 thick patties -Apply salt and pepper to each patty -Take your thumb or a the back of a spoon and press a dimple into one side -Grill the burgers for 3-4 minutes one one side -Flip the burgers, and put the cheese on top and let it melt, 3 more minutes -While the burgers are grilling, throw the buns briefly on the grill, just to toast the insides, about :30 -Once the burgers are done, let them rest for 5 minutes -To build the burgers, put the patty down first, then top with arugula, tomatoes and chopped red onions, on the top roll, spread a healthy amount of the rye whiskey mayo -Pick it up and chow down Bonus Tip - The meat mixture can also be fried in a pan, ground up, and used in a bolognese sauce, and can also be the ultimate brunch burger by topping it with fried egg, sunny side up.
