// BEEF ULARTHIYATH // Unlike the usual beef curries, beef is even better served in a fry or a roast preparation. Roasting is termed ‘Ularthiyathu’ in Malayalam, just in case you are wondering what that means ! The dish is very famous among Malayalees, our country style beef roast is cooked in iron pans with a unique aroma that will steal your hearts. The highlight in the recipe is in the fact that meat is slowly cooked. It is first pressure cooked to tender and then roasted in coconut oil with ginger, garlic and spices. It can be topped with either fried curry leaves or browned coconut bites. The best combination for this would be porotta or a little bit of toddy 😉 Ingredients: -Chilli powder -Coriander leaves -Turmeric powder -Fennel seeds -Cinnamon -Cardamom -Cloves -Ginger -Garlic -Lime juice -Salt -Beef -Coconut oil -Musturd seeds -Curry leaves -Shallots -Green chill Preparation: • In a bowl, add 2tbsp chilli powder, 2 tbsp coriander powder, 1tsp turmeric powder, 1tbsp crushed pepper, 1tbsp fennel seeds, 1 inch cinnamon, 1 star anise, 4 cloves, 4 cardamoms, ½ inch ginger and 4 cloves garlic. • Add salt and water as per requirement. • Blend it to paste. • Add the paste to 500 grams of beef and mix them well. • Marinate for 30 minutes. • Cook them in low flame in the pressure cooker. • Now, in a tawa, add 4tbsp coconut oil, mustard seeds, 1tbsp ginger, 1/3 cup of grated coconut, curry leaves, 4 nos’ green chilli, 1 cup shallots and sauté for 7 to 8 minutes. • Add the cooked pieces to this and sauté for few minutes in medium flame. • Ready to serve with some appam or porotta!
