The script is below: Welcome to Mochi new employees! Today we’ll be learning how to cut kiwi. To get started, the kiwi needs to be triple-rinsed in cold water. You’ll use a container and plastic strainer for this. Put on some gloves and make sure you have a foam pad under your cutting board, a knife and spoon Get a good grip on your kiwi and cut the ends off Cut the kiwi in half Then, peel off the skin using a spoon. Be careful to keep as much fruit as possible. Generally the kiwi can be cut in thirds each way, for a total of nine bite-size pieces per half kiwi. If you have an extra large or small kiwi, just make sure the pieces are about this size and use your best judgment. Always put the freshly cut kiwi in a new container. Cut 5 to 6 for a small container and about 10 for a large container. Fruit is always cut at the front counter so customers can see first-hand how fresh our toppings are! Here’s the finished product!
