We finally headed down to try one of Appetite’s community favourites - Papo’s Bagels. Founded by an American couple bringing authentic New York–style bagels to London, Papo’s is all about doing the classics properly: hand-rolled bagels, rich cream cheese, and perfectly cured smoked salmon. Every bagel is handmade fresh each morning by Papo himself. We sat down with Georgia and Gabe, who shared the story behind this family-run business - from how the idea was born during lockdown, to turning uncertainty into opportunity. After opening their first physical shop in early 2022, Papo’s continued to grow rapidly. In 2025, their classic bagel was named one of Deliveroo’s top global trending orders - a huge milestone for a small London bagel shop.
