These cupcakes are full of Biscoff cookie crumbs, filled with melted cookie butter, and topped with Biscoff cookie butter frosting. If you are a Lotus Biscoff lover, you will love these! Ingredients: (12 servings ) Biscoff Cupcakes 180gr flour 1 teaspoon Baking powder ¼ teaspoon Baking soda 1 teaspoon Salt 56gr Biscoff cookie crumbs 115gr unsalted butter (room temperature) 150gr white granulated sugar 1 teaspoon vanilla extract 30gr Sour cream (room temperature ) 2 Large eggs (room temperature) 120gr Buttermilk (room temperature) Use a pipe tip or a sharp knife to cut a hole in the middle of the cupcake. Melt the cookie butter in the microwave for 20 seconds and fill the cupcakes. Cookie Butter Frosting 110gr unsalted butter (room temperature) 55gr Biscoff cookie butter 165gr powdered sugar (Preheat oven to 180ºC and bake for 18-20 minutes) Enjoy!
